Powdered Coconut Sugar
Superfine powdered Coconut Sugar from Kulon Progo, Indonesia, has arrived! Made from sweet nectar collected by hand-tapping the blossoms of coconut palm trees, this unique sugar requires a very labor-intensive process to yield its complex sweetness: rich notes of milk chocolate, dark honey, toasted marshmallows and soft gingerbread create a s’mores-like flavor profile.
SINGLE ORIGIN COCONUT SUGAR

In villages across the island of Java, Indonesia, our partner farmers scale towering coconut palm trees twice per day to collect nectar from the trees’ clusters of green flowers. The nectar is allowed to drip into bamboo tubes, which are then taken home to be cooked and reduced.
Coconut blossom nectar is cooked and reduced over wood-fire.
The nectar is kettle-boiled in small batches over wood-fire until thickened and super-concentrated in flavor. Once sticky, dark, caramelized sugar clumps form and are allowed to cool, the cooked sugar is collected from every village and ground and sifted into a superfine powder.
