Welcome to Friday, sweet Friday. We’ve been saving one of our most anticipated launches for this moment in time: a super flavorful, raw and wild trio of Woodland Honeys from Tanzania’s Miombo woodlands, one of the last wild chimpanzee habitats in the world. This is a uniquely special collaboration with the inimitable Dr. Jane Goodall DBE, and a dream come true for our co-founder, Ethan, who’ll be penning next Tuesday’s newsletter to share more on the significance of this project.

Our Woodland Honeys are produced by wild bees who feed on 28 species of wildflowers in the biodiverse Miombo woodlands, resulting in highly complex flavors like no other honey available on the market. We follow a bee-friendly, sustainable honey harvesting protocol and preserve the flavorful qualities of wild hives through minimal human interference and filtration.

JANE GOODALL WOODLAND HONEYS

Amber Woodland Honey encompasses sweet and savory top notes of sweet miso, yuzu soy sauce and malted chocolate milkshake; snacky middle notes of honey wheat pretzels and sticky toffee cake; and base notes of floral applewood, lavender and pine resin. Stir into plain yogurt to unfold all its layers of flavor when sampling, enjoy it drizzled over buttered pancakes and hot tea, or whisk into salad dressing.

Dark Woodland Honey has an intensity that is more aged and assertive. The flavors of dried blackberries, jammy figs and candied lemon peel melt into an earthier layer of truffle-like savoriness, coffee candy and salted caramel. Drizzle onto whipped cream–dotted desserts, serve alongside pears and cheese, stir into hot toddies for a mature twist, or add to baked beans and savory marinades.

Smoked Woodland Honey is calming and grounded, like sitting by a cozy fireplace. Flavors of rich oakwood, sweetened black tea and warm nutmeg emerge to join the fruity tang of sun-dried tomatoes and cool, mellow eucalyptus. The smokiness accentuates the sweetness; it is the distinctively delicious result of harvesters using smoke to calm the beehive to ensure a harm-free honey collection.

The Miombo woodlands is the site of Dr. Jane Goodall’s groundbreaking research on natural habitats and conservation, and this collaboration continues her work of protecting the incredible biodiversity of western Tanzania. Local communities are able to humanely harvest the wild honey and offer these most extraordinary nectars for extra income, strengthening the incentive to protect the woodlands and the wildlife contained within from deforestation. Additionally, we will be donating 5% of all sales of this honey to support the work of the Jane Goodall Institute.
