They’ve simply been a game-changer in the kitchen and have taken my cooking and baking to the next level. Each of these spice blends was inspired by the flavors I grew up with and still use to this day. Each blend is all about the balance of sweet and savory and the hits of flavor that ping pong around your mouth. The warming notes of Chinese five spice was the starting point, but from there I took things in a few different—and very delicious—directions.”

Bird’s the Word is Peter’s modern twist on his mom’s five spice chicken salt. Savory Fermented White Peppercorns are balanced with sharpness from Black Lime and grounding comfort from sweet fennel, cinnamon, cloves and star anise. Use on roast chicken as a rub, in vinaigrettes and stir-fries, or follow Peter’s advice: “It works wonders with all meats, fish, and definitely roasted vegetables.”

(Not So) Sweet is a beloved nod to the highest compliment awarded to desserts in Peter’s family. This is a grown-up’s cinnamon sugar: enriched by Nyanza Vanilla, cloves, star anise and white peppercorns, it evokes the taste of dark chocolate brownie and gingerbread cookies. Peter thinks of it as “pumpkin spice’s sassier relative, the ideal candidate to fold into pies, banana bread, pancakes and French toast.”

“Feelin’ Snacky is the one that you’ll wanna keep right on the counter. A flavor-bomb mix of my favorite elements from za’atar and furikake, it’s the perfect thing to sprinkle on really anything: salads, pastas, roasted vegetables and grain bowls.” Sweet Panela comes together with smoky Black Urfa, floral Red River Coriander and nutty benne seeds for a mildly spicy but fiercely snackable blend.
