The Cellier aux Moines of Givry is a unique group of historical buildings, including a house with a large cellar and a farm, that has survived the vicissitudes of time. Having been the Abbey of La Ferté’s wine-producing property for nearly seven centuries, and then owned by the same family for two centuries following the French Revolution, it was purchased in 2004 by Philippe and Catherine Pascal and their three children, Camille, Marguerite, and Alexis.
The Cellier aux Moines represents the renaissance of one of the oldest domaines in Burgundy, in Givry, known as a Cistercian Cellier surrounded by its Clos since 1130. The Clos du Cellier aux Moines is a Premier Cru Classé in Givry, covering 32 acres. The Domaine du Cellier aux Moines owns 12 acres of perfectly oriented Premier Cru vineyards planted around the original Cellier.
This wine comes from south-facing, 12-year-old vines, organically farmed by the domaine since 2020. One-third of the volume has been vinified and aged in a large, oval tun, with the balance in 228- and 400-litre barrels, of which just one was new.
The wine has a green-golden color, with intense, bright, and open aromas. Vibrant notes of tangerine and yellow peach mingle with iris and stone. Earthy notes of freshly picked mushrooms lead on the palate, followed by ripe peach, Bartlett pear, with a subtle saline and oak-spice finish. This is a balanced and elegant vintage expression.
