INGREDIENTS:4-5 ounce lobster tail, fresh or thawed if frozen 2 tablespoons unsalted butter 1 clove garlic, finely minced 1/2 teaspoon lemon zest Fresh herbs (such as thyme and tarragon) Sea salt and freshly ground black pepper A squeeze of fresh lemon juice A pinch of smoked paprika for subtle depth (optional)TOOLS:Kitchen shears Small saucepan Baking dish Basting brush Meat thermometerButterfly Lobster Tails Step 1: Prepare the Lobster TailUsing kitchen shears, carefully cut the top of the shell down the middle, stopping before reaching the tail fin.Gently pull the shell apart, exposing the meat while keeping it attached at the base.
